Sophie is leading Champagne Cossy, certified 'Haute Valeur Environnementale' (HVE) and Viticulture Durable en Champagne (VDC) since 2019.
Respectful of our lands and our heritage, our vineyard requires our daily attention until the sales of our champagnes.
Cuvée L'Instant 2012
Confidential cuvee, “L’Instant 2012” is A wine full of life precisely revealing the character of Chardonnay and redolent of a beautiful purity.
As the wine breathes floral and menthol aromas underpinned by more biscuity notes. It’s a very youthful nose yet complex with the typical character of Chardonnay
On the palate acidity and effervescence come immediately to the fore producing a pleasantly vivacious impression. Then it’s the acidity that sets the tone as the wine settles on the palate with a taut, ethereal touch.
The finish is full of character: precise, airy and slightly chalky then fading gently to leave a sensation of grapefruit skin and minerality.
